This Stawberry-Melon Summer Salad Recipe is a family favorite and is a delight on a hot day at the beach or a quick breakfast option when things get a little busy. This recipe works best with fresh ingredients. Summer is coming to an end and with it goes all the fresh summer produce and ingredients. But don’t fret. 1 Cup of Lemon Yogurt
1 Tablespoon of Honey
1 Teaspoon of Lemon Juice
1 Teaspoon of Chopped Fresh Mint
1 sprig of Fresh Mint
2 Cups of Watermelon Balls
2 Cups of Cantaloupe Balls
2 Cups of Halved Fresh Strawberries
1/2 Cup of Black Berries
1/2 Cup of Raspberries
In a salad bowl, whisk together the lemon yogurt, honey, lemon juice, and chopped mint until smooth. Gently fold in watermelon balls, cantaloupe balls, and strawberries until coated in lemon yogurt dressing. Add black berries and raspberries at the end because these fruits are more delicate and like to bruise. Garnish with sprig of fresh mint and enjoy!
